I have a Kindle Paperwhite and would like to listen to audiobooks on it, managed to connect the Paperwhite to headphones only to find that the Paperwhite (unlike Fire HD) only plays .aax files I have searches everywhere and cannot find a mp3 to aax converter, although a lot say they can, when downloaded and installed the aax convert is not on the list.
Anyone know of any method to convert files to aax ?

I've done some googling and it seems like it's impossible. AAX is m4b format with added 'sauce' which is Amazon's DRM. So the only solution is change your reader.
