I want to venture into reading/experiment with graphic novels. Without any idea where to start, what is a necessary must read?

Basically, what I wanted to start with was The Watchmen and Sin City. Is this a good start?

Both are excellent in their own way.
Watchmen is basically a deconstruction of the superhero genre, and, given the way Moore writes, it may be a little heavy and confusing for a first book.
Sin City is one of my favourite series, little dark, but if you've watched the movie, you'll know what you'll get.

If you want some other suggestions :)
V For Vendetta - Alan Moore again, looking at a dystopian future Britian
Sandman - Neil Gaiman, the life and times of Morpheus the king of dreams. The issue dealing with Midsummer Nights Dream is the only comic to win a Workd Fantasy Award. They changed the rules afterwards so comics couldn't win.
Astro City - Superheroes done in the old style, bright, colourful and incredibly well done.
Usagi Yojimbo - Tales of a travelling samurai, all done with Animals. Much better than i could make it sound.
Transmetropolitan - Warren Ellis, another dystopian future, this time the US, and following around a journalist. Dark but very funny.

Preacher by Garth Ennis and Steve Dillon.

Maybe you'll like the Criminal series by Ed Brubaker and Sean Phillips. And everything done by those two (Velvet, The Fade Out, Fatale, Kill or Be Killed).

If you want some pulpy SF, I'd recommend The Fear Agent by Rick Remender, Tony Moore and Jerome Opena.

Check out Image Comics. They have most of my favorite graphic novels-Monstress, Saga, Wicked + The Divine, The Beauty, Deadly Class, Paper Girls...

As someone already said, I would recmmend reading things from Image. "Monstress" by Marjorie Lu and Sana Takaeda is just amazing, both in story telling and in art.
"Saga" is another great comic of the editorial, and even as much as I love them still, the first were the best.
also there is a series called "Descender" about a robots rebellion which I find to be amazing, one of the best things I've ever seen.

I second all the recommendations above and just want to add a few more:

a. Letter 44 - by Charles Soule, Alberto Albuquerque, Dan Jackson its a completed series so there's that advantage!
b. Fables - Bill Willingham, a completed series again but oh so much fun!
c. Habibi - Craig Thomas
d. Batman: The Long Halloween
e. Burma Chronicles: Guy deLisle - Funny and eye-opening at the same time.
